This month’s Dish features Megan Martin, a Small Business Lead here at JA Benefits.

Megan started her career at The Bedford Community Library as the Director of Community Engagement. Megan Recieved her Bachelor’s Degree in Speech and Hearing Science from Indiana University, and later obtained her Master’s Degree in Business Administration (MBA)

Megan enjoys spending time with her husband, her daughter and their dog. Her and her family enjoy hiking and traveling. Megan also enjoys working out with her gym family, while participating in Crossfit and running the occasional 5k.

Megan's JA Magic

Chicken Fajita Soup

Megan’s favorite recipe to enjoy is Chicken Fajita Soup.

“It’s so delicious that I can eat it leftover for days!”

Ingredients:

  • 1 can of corn
  • 2 small cans of Rotel tomatoes with green chilis
  • 4 cups of chicken broth
  • Taco seasonings- you can make your own or use two store bought packets.
  • 6 large chicken breasts

Directions:

  1. In a large crockpot, cook on low for 4-5 hours, then shred chicken. Let it cook for 2 more hours.
  2. Add 2 cups of cheese and some cilantro to taste.  You can also add precooked white rice at this point if you wish to add more thickness.
  3. Stir well and serve!

Michael’s Uptown Cafe

Megan loves going to Michael’s Uptown Cafe in Bloomington, Indiana. Her favorite thing to eat there is their Spaghetti Agiala.
