This month’s Dish features Jaren Hornbeak, a Benefits Advisor here at JA Benefits.

Jaren brings a fresh perspective on effective communication,  problem-solving and strong listening skills to team JA.

Jaren is involved in various fundraisers & charities locally. Most notably, he takes part in the Greenwood High School Winterization Project, an annual event where students and community members visit homes of the elderly and unable, to prepare their homes for winter. They help by raking leaves, cleaning gutters and mowing grass.

While attending Hanover College, Jaren played college basketball and after two years, he decided to volunteer as a coach for the New Washington High School basketball team.

Outside of the office, his hobbies include reading about current events and hiking with his dog, Baylor. However, Jaren’s biggest hobby is playing basketball, when he has time between training and coaching kids teams (ages ranging from 11 to 18).

Crockpot Burrito Bowls

“I love this recipe because its very easy to make and you can play with it and alter it to your liking. Personally I like spicy food, so I add jalapeños and use pepper jack cheese when I make it.”

Ingredients

  • 2 lbs chicken breasts, about 3 chicken breasts
  • 1 onion, diced
  • 2 1/2 cups salsa
  • 3 cups chicken broth
  • 1 packet taco seasoning
  • 1 tsp cumin (optional)
  • salt and pepper, to taste
  • 2 3/4 cups instant rice, brown or white
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 1/2 cups shredded Colby jack cheese

Directions

  1. Place chicken and diced onion in slow cooker and add broth, salsa, taco seasoning and cumin. Cover and cook on LOW for about 4 hours or until chicken is cooked thru
  2. Remove cooked chicken and shred with two forks. Add chicken back to slow cooker.
  3. Turn slow cooker to HIGH and add instant rice and beans. Stir. Cover and cook for about 40 minutes until rice is tender and liquid reduced. Top with shredded cheese, cover and cook for a few minutes longer until cheese is melted.
  4. Serve in a bowl with desired toppings.
