This month’s Dish features Brooke Lipscomb, an Account Manger here at JA Benefits.
Brooke began her career as a Quality Coordinator and Purchasing Agent. During that time, she gained the necessary skills to follow procedures in a timely fashion as well as being able to build personal relationships. Brooke’s favorite catchphrase is, “Work hard so you can play hard”.
Brooke loves spending time with her husband and their two kids. She also loves outdoor activities such as kayaking, or going on a bike ride.
Porcupine Meatballs
Brooke’s favorite recipe to enjoy is Porcupine Meatballs!
“This recipe is one that my mom made often when I was growing up and has become a staple in my own family dinner rotation. Pair it with mashed potatoes and a vegetable for a complete meal.”
Ingredients:
- 1-pound ground beef
- 1 box beef rice-a-roni
- 1 egg
- ½ packet brown gravy mix
Directions:
- Mix thawed ground beef, rice from the rice-a-roni box, and one egg in large bowl. (Save the seasoning from the beef rice-a-roni box for later in the recipe)
- Make one-inch meatballs and brown on all sides.
- While the meatballs are browning, mix the seasoning packet from the beef rice-a-roni and ½ packet of brown gravy mix with 2 cups of hot water. Stir until powder is dissolved.
- Once the meatballs are browned on all sides, pour the seasoning/water mixture over the meatballs and bring to a simmer.
- Cover and simmer for 10-12 minutes, stirring occasionally.
*Recipe yields approximately 15-17 meatballs, depending on size.
McAlister’s Deli
Brooke loves eating out to McAlister’s Deli in Bedford, Indiana. Her favorite item to order is the Grilled Chicken Club made into a wrap with avocado added.
